Friday, July 20th, just 3 days ago, I challenged participants to share their healthy tips that have helped with staying on track this summer. Well, there has been an overwhelming response and I hope you continue to send me your ideas.

This is the first participant inspired blog composed entirely of ideas from YOU! I am extremely hopeful this blog post will inspire participants and provide a greater sense of community.

Healthy Side Ideas

Grilled Pineapple – Cut a fresh pineapple into rings, brush lightly with olive oil and grill for a couple minutes on each side

Zucchini boats – Cut the zucchini lengthwise and scoop out the seeds. Fill with various chopped vegetables likes bell pepper, onion, grape tomatoes, jalepenos, spinach, and add a small amount of low-fat cheese (either mozzarella or cheddar for this participant). Microwave for about 5 minutes or wrap in foil and toss on the grill 

Whip-Dream Sandwich – Spread frozen light whipped topping on chocolate graham crackers

Twist on Peach Pie – Cover a graham cracker with peaches and top with a dollop of peach Greek yogurt

Healthy Ranch Dip – Mix 1 packet of ranch dressing mix with 1 large container of plain Greek yogurt for a delicious veggie dip

Blueberry Squares – Mix one box of angel food cake mix with one 22 ounce can of light blueberry pie filling and bake in an ungreased 9×13 pan for 30 minutes. Makes 24 servings

*Crispy Edamame – Thaw, rinse and drain a 12-ounce package of frozen shelled edamame and spread along the bottom of a 9×13 baking dish. Drizzle with ¼ cup of parmesan cheese, 1 tablespoon of olive oil, salt and pepper, and bake at 400 degrees at 15 minutes.

*Fresh Salsa – Combine all ingredients below, mix well and refrigerate for an hour prior to serving.

– 4 cups chopped peeled fresh tomatoes

-1/4 cup finely chopped onion

– 1 jalapeno pepper, seeded and finely chopped

– 1 tablespoon olive or vegetable oil

–  1 tablespoon vinegar

– 1 teaspoon ground cumin

– 1 teaspoon salt

– 1 garlic clove, minced

Tips for Staying on Track

– DON’T go to a party hungry!

– Take a healthy side you LOVE!

– Fill up on fruit and raw vegetables

– Limit yourself to one dessert

– Make water your beverage of choice

– Eat smaller portions of less healthy choices

– Substitute Laughing Cow cheese on turkey burgers instead for regular cheese and mayo
