You all asked for healthy recipes, so here they come! From here on out, we will be posting the RotW each Friday to give everyone an opportunity to make it to the market and stock up on ingredients over the weekend.  However, the team here at the WMP was too excited about kicking off the RotW, and so here’s a recipe to get you started! Cheesy Meatloaf Minis

½ cup fresh breadcrumbs (or dry)                              1 Tbsp horseradish

1 cup chopped onion                                                   1 Tbsp Dijon mustard

2 garlic cloves chopped                                              ¾ tsp dried oregano

1/2c ketchup, divided                                                 ¼ tsp salt

3oz white cheddar cheese, diced                               ¼ tsp ground black pepper

¼ c chopped fresh parsley (or 2Tbsp dry)                  1 ½ Lbs. ground sirloin

2 Tbsp grated parmesan cheese                                1 large egg, lightly beaten

  1. Preheat oven to 425
  2. Toast breadcrumbs in a skillet over med high heat for about 3 min, stirring frequently (optional)
  3. Heat a skillet over med high heat; coat pan with cooking spray. Add onion and garlic; sauté 3 min.
  4. Combine onion mixture, breadcrumbs, 1/4c ketchup and remaining ingredients in a bowl. Shape into 6 (4×2 inch) loaves and place on a broiler pan coated with cooking spray. Spread 2 Tbsp of ketchup over each (if desired). Bake at 425 for 25 minutes or until done.

Nutrition info per loaf:  256 calories, 11.6g fat, 5.7g sat fat, 28.5g protein, 11.2g carbohydrate, 620 mg Sodium, 159mg Calcium

This may be altered to reduce sodium content by using reduced sodium cheeses, reduced sodium ketchup and eliminating the salt. Of course, adding additional herbs and spices to your taste will give it your own personal flare!

Serve with a fresh green salad with balsamic vinaigrette:

Combine 2 Tbsp balsamic vinegar, 2 Tbsp olive oil, 1 Tbsp minced shallots or onion and ½ tsp Dijon mustard in a large bowl. Stir in ¼ tsp sugar and 1/8 tsp salt. Add 1 5oz package of spring mix salad, 1 cup carrot ribbons and 1/2c thinly sliced red onion and toss. Makes 6 servings. (63 cal, 4.6g fat, 94mg sodium)

Tried this – and it is wonderful. Has so much flavor – with few ingredients. I like these types of recipes – something that you have on hand – simple to prepare – and great flavor. My husband is a picky eater – and he liked it – so that says it all! Please keep the recipes coming!

Great recipe! The taste is wonderful – and with just a few ingredients. I love simple everyday recipes – with stuff that I have on hand. This version is a lot less fattening than what I have made in the past. I have a picky husband – and he loved it. Please keep the recipes coming!
